Hyatt Regency Delhi has introduced Travel Diaries by Chef Zhang, a limited-period regional Chinese pop-up at The China Kitchen, available until November 23, 2025. Curated by Chef Zhang Hongsheng, the rotating menu presents dishes from several Chinese provinces, reflecting the chef’s extensive exploration of traditional cooking practices.
The menu moves beyond widely known Cantonese and Sichuan selections and brings together flavours from regions such as Guangxi, Shandong, Beijing, and Hunan. It highlights diverse techniques, including claypot cooking, dry-heat preparations, and the use of distinctive regional spices.
Guests can expect signature dishes such as Peking Duck, Sichuan-style dumplings, Mapo Tofu, Guangxi-style Claypot Lamb, and Shandong Wok Tossed Chicken, along with a range of handcrafted dim sums including Crystal Dumplings and Prawn Shao Mai. The China Kitchen’s open show kitchens further enhance the dining experience by showcasing live culinary preparation.
The menu is designed to be inclusive, with clear allergen indicators for gluten, nuts, and other dietary considerations. The approximate cost for two ranges from Rs 4500 to Rs 6000, excluding taxes and service charges. The pop-up strengthens the hotel’s focus on presenting authentic, storytelling-driven culinary experiences.
Speaking on the inspiration behind the menu, Chef Zhang Hongsheng shares: “Cooking is my passion. This ‘Travel Diaries’ menu is a tribute to the vast, beautiful history of China’s food. Each dish is a story, a moment of tradition thoughtfully reimagined. We aim to transport our guests, one flavourful bite at a time, to the authentic culinary landscape of my home country.” |
